Donne Tempo - Beaches Negril

Though the food here is buffet style, it far exceeded expectations on many levels. However the favorite food hangout for my group was the Last Chance Saloon. During the day, grilled burgers, tuna and swordfish, hot dogs, salads, soup, deserts and just about anything else one could want is available fresh and made to order.

In the evenings, hearty appetites will devour tender Kansas City strip steak, ribs, fish and other excellent dining options in an environment perfect for mom, dad and the children, who have a bit of freedom to venture around the open-air restaurant.

Cafe Carnival is a spot for a slice of pizza or a made-to-order sandwich or to create your own pasta dish with a variety of sauces.

The pizza was a surprise. Freshly baked in a brick oven, it was loaded with cheese and toppings and generously available.

Beaches Negril

Another surprise was the excellent selection of foods at the Tappanyaki-Style Japanese restaurant Kimono. The feast includes shrimp or leek-and-miso soup and followed by s main course that has everyone trying scallops and a fisherman's catch seasoned with ginger and sake; chicken; beef tenderloin; pork; vegetable stir-fry; and fried rice, all served by a Jamaican chef eager not only to cook, but to entertain his table-side guests.

For adults only, the Seville provides an evening of white-glove service in a Georgian-style restaurant serving Jamaican cuisine.

The Seville's chefs have created a menu that delights with appetizers such as Jamaica MiCrazy, grilled fritters with yam puree or the West Indies' lobster-and-pumpkin bisque.

After salads such as the Limbo Dancer - enhanced with pineapple, pecans and cinnamon croutons - or the St. Elizabeth - mixed field greens crowned regally with fried plantains - diners can choose a remarkable crouton-crusted snapper; Appleton Estate Jamaican rum-flamed beef tournedos; jerk-seasoned pork loin with fried plantains and rice with peas; or honey-and-herb roasted rack of lamb.

This restaurant serves a delightful and unexpected menu that has been designed to surprise and amuse with its selection and presentation.

Beaches offers a uniquely satisfying “all inclusive” vacation choice that takes all the stressed induced decision making away. A full week spent in the resort and I could still see no reason to go beyond its front gates.

This feeling was certified by something I had not seen before in many years of travel: guests, children and adults alike, walking solemnly from their rooms, bags in hand and tears in their eyes, with promises that, "We can come back next year, we really can."

This reaction probably can be credited to a combination of the resort's wish to provide all that a vacationer could want, - and the fact that seeing 7-foot-tall Zoey dancing in a pink tutu along the breezeway promises a smile, regardless of one's age, that will last all day.

During the 90-minute trip from the Montego Bay airport to Negril, I wondered what might lie hidden beneath the surface of the water, what life teemed there.

The chance to get close to all that underwater beauty was irresistible once I learned that Beaches Negril Resort & Spa offers guests a complimentary scuba class and shallow-water dive (40 feet.)

Before the end of my first day of instruction, a decision was made. I went back to my room $220 lighter to study a hefty manual that told me all those things that could go wrong underwater and thus began my quest to really learn to dive.

The certification class offered by the resort provides enough information for a strong swimmer (you need to be able to swim across an Olympic-length pool 20 times without stopping or touching down) to be able to don tanks, fins, mask and weights and step off the side of a boat and discover the world below.

This is not necessarily easy, and students are not just tossed into the ocean.

The sessions are taught by certified scuba divers who take guests through two half-days of instruction, during which they learn the fundamentals of diving, including equipment and techniques.

For my experience, Breaker, a Jamaican, did his best to put me at ease.

I was a bit frightened at times, but I was determined to achieve my goal of being able to breathe underwater.

The next morning, we went into the pool to prove we could swim the distance.

After a brief break, it was back to the pool to learn how to put on the cumbersome and heavy tanks, flippers and weights to splash around and practice the routines such as clearing masks and learning how to equalize air pressure to keep lungs and ears from exploding.

There was also a manual that must be read, a test to complete and an additional open-water dive.

Diving at Beaches Negril

Taking the certification course instead of the one-time diving experience entitled me to three longer dives, each of which taught me new diving skills and provided underwater discoveries.

There was more training and learning to do in open water, including practicing safety procedures above and below water and learning how to help a fellow diver in distress and how to ease a debilitating leg cramp.

Breaker noticed my enthusiasm and gave me a chance to explore this new world, although I was not the age and not really in the shape of a typical diver.

Those first dives did not come without a small scare when my mask clouded. Taking the steps I had been taught in the pool to clear the mask, I quickly learned that seawater stings the eyes in a way that pool water doesn't and that when you scream underwater, you spit out your air regulator.

Which can be a scare.

I was able to remember the training, use my oft-practiced arm sweep to retrieve the regulator and then, with air back in my lungs, exhale and clear the mask only to see Breaker broadly smiling and giving me a thumbs-up. With the confidence that comes from passing the test, I was able to relax and enjoy the many beautiful sights on the ocean bottom.

I marveled at brilliant colors and the variety and texture of coral. It was amazing to stop and hover, silently watching the shadows as the sun played through the water to the ocean floor.

Fascination became wonderment as, inches away, starfish moved gracefully along the seabed and as I stopped and peeked into, but never touched, large conch shells, wondering if someone might be home.

No one can express the thrill of looking down and within arm's reach seeing a young sea turtle, oblivious to a stranger's presence, just hanging out and enjoying the currents.

Maybe it knew I was doing the same.
